History

Ancient recipes and new ideas, respect for traditions and cutting-edge technologies: these have always been the founding values of Mandrile Melis, supplying chocolate excellence in Italy and abroad for thirty years.

The company was founded in Fossano, in the province of Cuneo, producing the famous Rum Cuneese. Over time, passion, creativity and untiring drive for excellence, the distinguishing features of true master chocolate makers, led to the expansion of its initial product varieties with highly original combinations and flavors, to create a range of unmistakable specialties. Cream pralines, Liquor Cuneesi, the original Basin ëd Fusan, Cioccogrissino, Cioccobella, Cioccomellows and Nocciolotti all tell of the company’s strong ties with the local territory, and many of its products are made with authentic Langhe hazelnuts from Piedmont.

Our territory

The varied Piedmontese landscape offers top quality raw materials. From vineyards in the Langhe, Roero and Monferrato hills, renowned DOC and DOCG wines are gained and appreciated all over the world. Here is produced the Tonda Gentile hazelnut also, a unique product of its kind.

The main ingredient of our recipes is the Tonda Gentile Trilobata from Langhe hills, selected and roasted by our Maître Chocolatier, to be refined in a velvety and fragrant paste, or finely chopped into a crunchy grain, or used whole, to better enjoy the unique aroma and delicate flavor.

Only fresh milk and free-range eggs for our custard, handmade and immediately blended with selected ingredients and poured into the delicious milk cup, milk or dark chocolate-covered. Alcohol-based creams benefit from a slow rest: over 96 hours at controlled temperature and humidity, in order to enhance the peculiarities of each liqueur.
